Stradbroke Island

The waters of Moreton Bay will provide a glorious backdrop as guests dine on a menu of contemporary Aboriginal cuisine, utilising produce from Moreton Bay including fish, fruit, berries, oysters and eugaries.

Dale Chapman is Queensland’s only acclaimed Aboriginal Chef and will work closely with the community members of Moreton Bay to create a menu for the dinner.

Salt Water Dining will celebrate the richness and vibrancy of the Aboriginal community of Moreton Bay. Members from the community will be invited to share the old recipes and opinions about the transformations.

Guests will also be invited to view a pictorial history, past and present of North Stradbroke Island and surrounding Moreton Bay areas.
